GULAB JAMUN











Radhika of Tickling Palates is hosting a fun event named BLOG HOP WEDNESDAYS.This week i am paired with Priya  of NOW SERVING.I tried out these super delicious Gulab jamuns her blog,. You can find the original  recipe here.


Ingredients
  1. All purpose flour- 1 cup
  2. Milk powder-1 1/2 cups
  3. Baking soda-1/4 tsp
  4. Yogurt or regular heavy cream
  5. Oil
For the syrup
  1. Sugar- 2 1/2 to 3  cups
  2. Water- 3 cups
  3. Cardamon pods- 4 nos
  4. Saffron -a few strands(optional)






























Method
  • Sift all purpose flour,milk powder and baking soda together.
  • Add sufficient quantity of heavy cream or yogurt  and knead well to form a soft dough.(like chappathi dough)
  • Keep aside for 45 minutes.
  • Meanwhile combine sugar and water in a pan and cook for 5 minutes or  until it thickens slightly.Add cardamom pods and saffron and keep aside. 
  • Make small balls out of the dough( almost 25 to 28 nos) and keep aside.
  • Heat oil in a pan and deep fry these balls over medium low heat until it turns dark golden brown in color.
  • Drain these cooked balls into the sugar syrup and keep aside until the jamuns are completely soaked in the sugar syrup.

UZHUNNU VADA








Ingredients

  1. Urud dal/Uzhunnu- 1cup
  2. Ginger chopped-1" piece
  3. Green chilies chopped-2 to 3 nos
  4. Shallots/chumanulli chopped-6 to 8 nos
  5. Black pepper corns-8 to 10 nos
  6. Curry leaves chopped - 1 sprig
  7. Salt to taste
  8. Oil -to deep fry
  9. Water




Method


  • Wash and soak urud dal for 3 to 4 hours.
  • Drain this and grind it to a smooth paste adding a few tablespoons of water if required.
  • Add ginger,green chilies,shallots,pepper corns,curry leaves and salt to taste to the ground paste and mix well using a spatula.
  • Keep aside for 30 to 45 minutes.
  • Heat oil in a wok.Just add a pinch of the dough into hot oil,if this rises to the top immediately then the oil is hot enough to prepare the vadas.
  • Wet your palm with cold water and take a small portion of the dough and roll it into a ball.Slightly flatten it and make a hole in the center using your finger.Slip this into hot oil(over medium flame).cook until it turns golden brown.
  • Serve with coconut chutney





Note:If you are not able to shape the vadas add a few tsp of rice flour to the batter to bring it to the right consistency.

PASSION FRUIT SMOOTHIE






Ingredients

  1. Passion fruit- 3 nos
  2. Banana- 2 nos(small)
  3. Apple juice- 1 to 1 1/2 cup
  4. Sugar- to taste



Method

  • Scoop out the pulp from the passion fruit and using a blender ,blend it for a  few seconds.Pass it through a fine mesh sieve ,discard the seeds.
  • Add the passion fruit pulp,banana,apple juice and sugar to taste into a blender,blend until smooth.
  • Serve immediately.

VEGETABLE NOODLES






Simple vegetable noodles using instant  MAGGI NOODLES

Ingredients

  1. MAGGI noodles- 2 cakes
  2. MAGGI taste maker-1 packet (the one that you get with the noodles)
  3. Ginger chopped-1 tsp
  4. Garlic chopped- 1 tsp
  5. Green chilies chopped- 1 no
  6. Spring onion chopped- 2 tbsp
  7. Onion sliced finely- 1/4 cup
  8. Cabbage(julienned)-1/2 cup
  9. Carrots(julienned)-1/2 cup
  10. Green beans(julienned)-1/2 cup
  11. Capsicum/bell pepper-(julienned)-1/2 cup
  12. Soya sauce- 1 tbsp
  13. Tomato sauce- 1tbsp
  14. Olive oil
  15. Water
  16. Salt to taste


Method

  • Cook the noodles with enough water till done(DO NOT add the taste maker).Drain well and keep aside.
  • Heat oil in a pan add ginger and garlic and saute till the raw smell leaves.
  • Now add the green chilies and spring onion,saute for a few seconds.
  • Add onion and saute for a minute.Now add cabbage,carrot,green beans,and capsicum.
  • Cook the vegetables on high flame for a few minutes,stirring in between.Do not over cook the vegetables.
  • Now add the taste maker ,soya sauce and tomato sauce , mix well.
  • Add the cooked noodles and mix well.Add salt if required
  • Switch off the flame and drizzle olive oil on top and garnish with chopped spring onion.

COCONUT LADDU








Radhika of Tickling Palates is hosting a fun event named BLOG HOP WEDNESDAYS.This week i am paired with Mugdha  of Cooking Fundas.I tried this super easy and delicious coconut laddoo from her blog. You can find the original  recipe here.


Ingredients

  1. Sweet condensed milk-1 cup
  2. Grated coconut-2 3/4 cups
  3. Ghee- 1 tsp
  4. Cardamom powder- 1/4 tsp(optional)
  5. Roasted semolina-1/4 cup(optional)



Method

  • Combine 21/2 cups grated coconut with 1 cup condensed milk and ghee,cook on low fire.
  • Cook until the mixture leaves from the sides of the pan,stirring in between.
  • Add cardamom powder and mix well.Allow it to cool slightly .
  • Lightly grease your palm with ghee and roll the mixture into small balls.
  • Roll the balls in the remaining grated coconut and semolina.Garnish with almond flakes.
(Note:You can add a few tsp of  powdered sugar to the coconut mixture according to taste,if required)
