Chocolate Apple Muffins | Whole Wheat- Vegan Apple Muffins


Chocolate Apple Muffins



Vegan ,whole wheat , refined sugar free -Apple and chocolate muffins.
Prep Time: 10 minutes
Cooking Time: 25 minutes
Makes: 9 muffins
Ingredients:
  1. Whole wheat flour - 3/4 cup
  2. Baking soda- 1/2 tsp
  3. Baking powder- 1/4 tsp
  4. Cocoa powder - 1/8 cup
  5. Salt- 1 pinch
  6. Water- 1/2 cup
  7. Vegetable Oil - 1/4 cup
  8. Vanilla extract- 1/2 tsp
  9. Grated jaggery /Cane sugar- 1/2 cup
  10. Apple ,chopped - 1/2 cup
Instructions:

  • Preheat oven to 180 Deg C.Line a muffin tin with paper cases , keep aside.
  • In a bowl,combine together whole wheat flour,baking soda,baking powder,cocoa powder and salt using a fork.Keep aside.
  • In another bowl,combine together water,vegetable oil,vanilla extract and jaggery/cane sugar.Stir well until the jaggery is dissolved completely.
  • Add this to the prepared dry ingredients and mix gently until combined.( Do not over mix.)

  • Next add chopped apple and mix gently.
  • Using a spoon,fill the muffin cups 3/4 full.Bake for about 25 minutes or until a skewer inserted into the center comes out clean.Let cool in the pan for 10 minutes.Transfer to a wire rack to cool.

          Rice flour brownies | Gluten free brownies


          Rice flour brownies

          Gluten free rice flour brownies
          Prep Time: 10 minutes
          Cook time: 30 minutes
          Yields: 16 brownies
          Ingredients:
          1. Brown rice flour- 1.5 cups
          2. Baking soda-3/4 tsp
          3. Instant coffee powder- 1 tsp( optional)
          4. Salt-1 pinch
          5. Butter,melted- 3/4 cup
          6. Sugar-1.25 cups ( i used brown sugar)
          7. Cocoa powder-1 cup
          8. Vanilla extract-1 tbsp
          9. Eggs-3 large
          10. Dark chocolate chips- 1 cup( optional)
          Instructions:




        • Preheat oven to 180 deg c.Line a 8" x 8" pan with parchment paper.
        • In a mixing bowl combine together,brown rice flour,baking soda,instant coffee powder ( if using)and salt,using a fork.keep aside.
        • In a sauce pan,melt butter over medium heat.Add sugar and mix well until combined.
        • Remove sauce pan from the heat and add cocoa powder.Mix well.
        • Whisk in vanilla extract.
        • Add eggs one at a time,whisking well as you do so.Whisk well so that the mixture is smooth and glossy.
        • Now add the dry ingredients and mix well ,just until combined.
        • Fold in the chocolate chips and transfer the batter to the prepared pan.Bake for about 30 to 35 minutes or just until  cooked all the way through.( Do not over bake.)
        • Allow it to cool completely before cutting and serving.
        • NOTES
          • You can also use oats flour instead of rice flour,if desired.
          • I used just 1/4 cup chopped dark chocolate.
          • These brownies taste even better the next day.

            Eggless Chocolate Self- Saucing Pudding

            Chocolate self saucing pudding - a light chocolate sponge with rich fudge like sauce,served with ice cream /cream.

            Prep Time: 15 minutes
            Cook time: 25 minutes
            Serves: 6 people
            Ingredients:
            1. Caster sugar-3/4 cup
            2. Self raising flour,sifted-1 cup(see notes)
            3. Cocoa powder,sifted- 2 tbsp
            4. Butter,melted-50 gms( 3.5 tbsp)use vegan butter,if desired
            5. Milk-1/2 cup( use non-dairy milk for vegan option)
            6. Vanilla extract-1/4 tsp
            7. Brown sugar-1/3 cup
            8. Cocoa powder-2 tsp
            9. Boiling powder- 1 cup
            10. Ice cream/ cream-to serve
            11. Butter-to grease the ramekins
            Instructions:

          • Preheat oven to 180 deg C.Brush the ramekins/ovenproof dish with butter.

          • In a mixing bowl,combine together caster sugar,self raising flour and 2 tbsp cocoa powder.

          • Add melted butter, milk and vanilla extract.Mix well,just until combined.
            In another bowl combine together brown sugar and 2 tsp cocoa powder.Keep aside.
          • Transfer the batter to 4 or 6 greased ramekins ( or a large ovenproof dish).Sprinkle the brown sugar-cocoa mixture evenly over the batter.
          • Gently pour boiling water over this .Do not stir.Bake for about 25 minutes.Serve warm with vanilla ice cream.
          • NOTES
            •  To prepare 1 cup self raising flour mix together 1 cup all purpose flour with 1.5 tsp baking powder and 1/ 4 tsp salt until combined.

            Eggless Brownies- Recipe with step by step pictures

            Prep Time: 10 minutes
            Cook time: 25 minutes
            Makes: 15 to 18 nos
            Ingredients:
            1. All purpose flour-12 tbsp
            2. Baking powder-1 tsp
            3. Baking soda-1/4 tsp
            4. Salt-1 pinch
            5. Semi sweet chocolate chips-1.5 cups
            6. Butter-3  tbsp( or use vegan butter)
            7. Banana,mashed-1/2 cup
            8. Sugar-1/2 cup( i used brown sugar)
            9. Hot water-2 tbsp
            10. Vanilla extract-1 tsp
            Instructions:





          • In a mixing bowl,combine together all purpose flour,baking powder,baking soda and salt using a fork.Keep aside.
          • Melt together chocolate chips and butter in a double boiler.( you can also melt it in a microwave,if desired).
          • Transfer the melted chocolate to another bowl,add the mashed banana,sugar,hot water and vanilla extract.Mix well until combined.

          • Now add the dry ingredients and mix ,just until combined.Do not over mix.
          • Preheat oven to 180 Deg C. Line a baking tray ( 10 "x 10" )with parchment paper.Transfer the batter to the prepared baking tray.Bake for about 25 minutes or until a skewer inserted into the center comes out with very few crumbs. Allow it to cool completely
          • Notes:
            • You can also use applesauce instead of mashed bananas.
            • I halved the recipe and used a 5" x 5" pan.

            Chocolate Biscuit Pudding

            Easy Chocolate and biscuit layer pudding.
            Prep Time: 30 minutes
            Cook time: 8 minutes
            Serves: 5 to 6 people
            Ingredients:
            1. Marie biscuits,crushed- 200 gms( about 40 biscuits)
            2. Butter-100 gms( about 1/2 cup)
            3. Milk-1.5 Cups
            4. Sugar- 1 Cup
            5. Cocoa powder- 3 tbsp
            6. Cornflour-2 tbsp
            7. Vanilla extract-1 tsp
            8. Whipped cream-1 Cup( or as required)
            Instructions:
          • In a mixing bowl,combine together crushed biscuits and butter.Blend with your fingertips until the mixture resembles coarse crumbs.Keep aside.
          • In a sauce pan,combine together milk,sugar,cocoa powder and cornflour.Mix well until combined.Cook this milk mixture until it turns really thick,stirring continuously.Allow it to cool completely,add vanilla and mix well.
          • Place a layer of the biscuit crumbs in a large serving dish,or small individual bowls.Add a layer of the prepared chocolate pudding ,repeat layers finishing off with biscuit crumbs.
          • Top it with whipped cream,if desired.Refrigerated for about 3 to 4 hours.Serve cold.

            Easy and delicious ,chocolate fudge frosting.
            Prep Time: 5 minutes
            Cook time: 12 minutes
            Makes: 1.5 cups ( approx)
            Ingredients:
            1. Cocoa powder- 1 cup
            2. Sugar-2 cups
            3. All purpose flour-1/2 cups
            4. Milk- 3 cups
            5. Butter,softened- 1/2 cup
            6. Vanilla extract- 1 tsp
            Instructions:


          • In a bowl,combine together cocoa,sugar and all purpose flour using a whisk.
          • Add milk and butter,mix well until combined.
          • Cook,stirring continuously on a double boiler until it is thick enough to spread.( adjust the consistency according to your requirement ,as frosting turn slightly thick when it cools down)
          • Add vanilla extract and mix well.(I also added 1 tsp instant coffee powder)
          • Allow it to cool a bit before using. 
          • NOTES
            • For best results use good quality cocoa powder.

            Quick, easy and delicious chocolate pudding.
            Prep Time:5 minutes
            Cook time: 10 minutes
            Serves: 6 people

            Ingredients:
            1. Granulated sugar- 1/2 cup
            2. Cocoa powder-1/3 cup( use good quality cocoa)
            3. Cornflour-3 tbsp
            4. Dark brown sugar- 3 tbsp
            5. Salt-1 pinch
            6. Milk- 4 cups
            7. Egg yolks ,lightly beaten- 3 large
            8. Grated chocolate- 1/4 cup
            9. Vanilla extract- 1 tsp
            10. Butter -1 tbsp
            Instructions:
          • In a large saucepan combine together,granulated sugar.cocoa powder,cornflour,dark brown sugar,salt and milk.Mix well until combined.Bring this to a boil,stirring continuously.
          • Place egg yolks in a bowl.Gradually add hot milk mixture to egg yolks,stirring continuously.Return this to the saucepan.
          • Cook over medium heat ,stirring continuously,for about 5 minutes or until the mixture turns thick.
          • Switch off the stove,add grated chocolate and vanilla extract and butter.Mix well until chocolate melts completely.(If there are lumps,just pass the pudding through a strainer and break the lumps using the back of a spoon)
          • Transfer it to a bowl ,serve warm or chilled.

            STEAMED CHOCOLATE CAKE | EGGLESS STEAMED CHOCOLATE CAKE

            Ingredients
            1. All purpose flour- 3/4 cup
            2. Sugar- 1/2 cup
            3. Cocoa powder- 2.5 tbsp
            4. Baking soda- 1/2 tsp
            5. Salt- 1 pinch
            6. Instant coffee powder- 1/4 to 1/2 tsp( optional)
            7. Water- 1/2 cup
            8. Oil- 2 tbsp
            9. Vanilla extract- 1 tsp
            10. White vinegar- 2 tsp
            Directions
            • Lightly brush the sides and bottom of the baking tray with oil.Line it with parchment paper.
            • In a mixing bowl,whisk together all purpose flour,sugar,cocoa powder,baking soda,salt and coffee powder(if using).Keep aside.
            • In another mixing bowl,combine together water,oil,vanilla and white vinegar.
            • Add this to the prepared dry ingredients.
            • Mix gently with a spatula ( or a whisk), just until combined.Do not over mix.
            • Immediately transfer this to the prepared cake pan.Do not fill more than half of the pan.
            • Cover the top loosely with a piece of aluminum foil.
            • Place the cake pan in the steamer.Cover the steamer and steam for about 40 minutes,or until a skewer inserted into center of the cake comes out clean.
            • Remove the cake pan from the steamer.Allow it to cool completely .Then carefully run  a knife around the inside edge of the pan,and transfer to a serving dish.
            • If wished decorate with chocolate ganache.
            NOTE
            • Line the sides and the bottom of the cake tin with parchment paper ,for cleaner sides.I did not line the sides of the pan and as you can see the sides are not that pretty.
            • You can also bake the cake ,if desired,Bake at 180 deg c for 20 to 25 minutes or until a skewer inserted into the center of the cake comes out clean.
            • I used whole wheat flour for the cake( in the pic), the texture will be much better than this ,if you use all purpose flour.
            • You can double the recipe for an 8" cake.
            • Allow it to cool completely before slicing  with a serrated knife.For perfect slices ,chill the cake in the refrigerator for 30 minutes.
